One-Pot Burrito Bowls


This was an instant favorite for sure! Absolutely loved this recipe. I'm just thankful there are leftovers for tomorrow too, because I'm too full to eat more now, but I can't wait to have more! I ditched the green chilies and canned tomatoes since I'm not a fan, cooked diced jalapeno with the onion instead of green pepper, and used brown minute rice, and it turned out great. We put more salsa on top, as well as sour cream, avocado, lime, and cilantro. It makes a nice big  pan and is very filling- a good bang for your buck!
