4-Ingredient Peanut Chicken Ramen
Ibotta had a rebate on a rotisserie chicken and 2 liter of soda around the time I discovered this recipe from Bev Cooks on Tablespoon.com. The starts had aligned, so I decided to give it a shot. This whole thing just sounds amazing, right? WRONG. Don't get me wrong- this recipe has potential, but it needs some serious altering. First off, there's WAY too much peanut butter in this. It was like eating oddly textured peanut butter straight out of the jar- ugh. I think 2T - 1/4C would be about right. I definitely recommend using low-sodium soy sauce, since the amount of sodium alone in the ramen is outrageous- but that's coming from a person with high BP, so whatever you choose is fine! I also think throwing in about 1T of rice vinegar and just a tiny bit of sesame oil would liven things up a little. I plan to try this again one day, but not until the mouth-stuck-shut bad memories have faded away. If you try my alterations, let me know how it turns out!
