Quick Cilantro Lime Chicken
Cilantro and lime- a match made in heaven. One of my favorite flavor combinations of all time! I had to try this recipe from Tiredandinspired.com when I came across it. And I was sold when I saw the word, "quick." This is really a perfect recipe- it's quick, simple has good basics, and lots of room to play around with! It was fantastic, and a great fast meal! We had it over brown rice- I added avocado and sour cream to mine, and hubs added green bell pepper and salsa to his. Totally customizable. Spaghetti Squash with Bacon, Spinach, and Goat Cheese
I was so excited for this recipe by Christine Byrne of the Buzzfeed staff! I love some good spaghetti squash lasagna as much as the next person, but something new sounded amazing! Especially with all the components to this dish- sounds absolutely delicious. Well- it really ended up being kind of boring. My poor husband, who I've made sick of spaghetti squash as it is, couldn't even finish it. I was just disappointed. It needs more. I couldn't taste the maple at all. It needs garlic, pepper- something. I think this could be really good if varied a bit. Play around with it and let me know what worked and what you liked! Spaghetti Carbonara
Not going to lie- I'm almost drooling just thinking about this dish! I cannot resist a tasty Carbonara- and this recipe definitely fit the bill! This is going to be a shining gem in my treasure trove of recipes for years to come. So good, so easy. I have no complaints on this at all, but I do have a warning- listen to that part about your pan being too hot. You WILL have scrambled eggs and noodles! I mean, that's hardly the end of the world, but, give your pan a few moments to cool off- you'll be glad you did. I threw a handful of fresh torn spinach into this to try and add some veg so I wouldn't feel so bad about all the fat and carbs I was about to consume. One-Pot Burrito Bowls
This was an instant favorite for sure! Absolutely loved this recipe. I'm just thankful there are leftovers for tomorrow too, because I'm too full to eat more now, but I can't wait to have more! I ditched the green chilies and canned tomatoes since I'm not a fan, cooked diced jalapeno with the onion instead of green pepper, and used brown minute rice, and it turned out great. We put more salsa on top, as well as sour cream, avocado, lime, and cilantro. It makes a nice big pan and is very filling- a good bang for your buck! Slow Cooker Hawaiian BBQ Pork Sliders
I've got to tell you- I really just don't care for pork. I can eat a little of it once in a while, but it's just not my thing. I don't know if it's the taste, texture, or what, but I just can't handle it. Bacon is a whole separate realm by the way, but I digress. This BBQ pork was amazing! I LOVED it! Yes- the girl who doesn't like pork, fell in love with this recipe. I honestly wouldn't change a thing- it was so easy. I could live without the pineapple rings and just use juice, but they were good on the sandwiches too. Either way is great. I'm definitely hanging onto this one so that my poor husband can actually have some pork once in a while and I won't have to suffer! You can find this gem here at SixSistersStuff.com.
4-Ingredient Peanut Chicken Ramen
Ibotta had a rebate on a rotisserie chicken and 2 liter of soda around the time I discovered this recipe from Bev Cooks on Tablespoon.com. The starts had aligned, so I decided to give it a shot. This whole thing just sounds amazing, right? WRONG. Don't get me wrong- this recipe has potential, but it needs some serious altering. First off, there's WAY too much peanut butter in this. It was like eating oddly textured peanut butter straight out of the jar- ugh. I think 2T - 1/4C would be about right. I definitely recommend using low-sodium soy sauce, since the amount of sodium alone in the ramen is outrageous- but that's coming from a person with high BP, so whatever you choose is fine! I also think throwing in about 1T of rice vinegar and just a tiny bit of sesame oil would liven things up a little. I plan to try this again one day, but not until the mouth-stuck-shut bad memories have faded away. If you try my alterations, let me know how it turns out! Loaded Baked Potato and Chicken Casserole
Oh man, I know- it's been a while. Life has been a bit hectic these past few months, but I've spent the last few weeks really trying to center myself and get back into the swing of things. I've been on Pinterest stockpiling recipes to try and review, and it has paid off, my friends! I have some tasty things to share with you. First off, we'll start with this delicious creation from Diane over at Delicious as it Looks. This Loaded Baked Potato and Chicken Casserole is so easy and SO delicious. Definitely not a great choice if you're counting calories, but ingredients can always be altered. I added a package of frozen broccoli to my layers to incorporate more veggies, so I used a 9x13" casserole dish instead of the smaller one. I also halved the butter. Definitely give this one a shot- it's delicious, and a crowd-pleaser for sure! You can find the recipe here!
