Green Goddess Inspired Grilled Cheese

I found this Green Goddess Grilled Cheese on the Tastespotting blog, and decided to make something similar. I used Great Grains multi-grain bread, Provolone cheese, my own homemade pesto (using the recipe from Zucchini Pesto Roll-Ups recipe, substituting the basil with spinach from my garden), spinach from the garden, and a nice ripe avocado. I buttered the bread, then layered a slice of cheese, avocado, spinach, and one more slice of cheese. Then grill as you normally would! These are amazing. They were so good, and they were an awesome summer alternative to the standard grilled cheese. These would also be fantastic with Havarti, or an aged white cheddar. Definitely give these a shot!
