Zucchini Pesto Roll Ups from PaleOmg


These were as delicious as they look! I used spinach from my garden instead of the basil for the pesto, but it turned out wonderfully. The only thing I didn't like about this recipe was that it ended up being a whole lot of preparation for something relatively simple. It took me as long to make these as it would have to make something a little more complex. Next time, I think I'll definitely skip the assembly and maybe use the pesto on some whole wheat penne pasta, add the sausage to the pasta, and serve the grilled zucchini on the side.
